Thujone content

The thujone content in all absinthe drinks is very important, without thujone, absinthe is nothing, and absinthe obviously needs thujone content in itself, it is a chemical compound which is a colorless liquid with a menthol smell. A general fact of thujone is that it boils at 210 degrees Celsius and is always insoluble in water however thujone is soluble in ethanol or diethyl ether.

In Europe the acceptable level of thujone content is 0.5 ppm (mg/ kg) in foods AND beverages, 10 ppm in alcoholic drinks above 255 alcohol level, and 5 ppm in alcoholic drinks which alcohol level is under 25 [5 and thujone may be acceptable as 35 ppm in bitters.
